How can you resist making something with peppers when they look this gorgeous.... If you have ever been to an Italian street festival you probably have seen a food booth selling
Sausage and Pepper sandwiches...
there is nothing better...and this is what ate over the weekend....Little on work....
Big on flavor!!You'll need 1 pound of good Italian sausage...either sweet or hot. I only use sweet.
1 onion....a red, green and yellow or orange pepper. Make sure all seeds are washed away.
These peppers were extra jumbo so I used only a half of each color...
I also swear by Bertolli sauce....tomato-basil type.
some garlic salt freshly ground and a bit of olive oil..... Italian seasoning or fresh basil
fresh sausage is always easier to cut if you use kitchen shears....cut into bite size pieces...

I used to watch Jeff Smith "The Frugal Gourmet" years before he was indicted on abuse charges....no surprise...I met him and "Mr. Craig" once and let me tell you the man was very strange. Goodness knows what he did to poor Elmo.......Anyhoo, I always remember one thing he always use to say and it really works....
"Hot pan.....cold oil....food won't stick".....
That looks wonderful. Reminds me of a recipe for spaghetti with Italian sausage and peppers that I clipped out of Southern Living not too long ago.

I'll have to write this one down for my son - he loves to cook and next year there'll be no cafeteria food.

I used to love going to the San Gennaro Festival in Little Italy, NYC, loved the sausage and pepper sandwiches, the zeppalas, the cannoli's, pizza....the Boss is a lucky man!!
